A traditional confection in countries including Spain, Argentina, Uruguay, Brazil and Latin America, alfajores are prepared in a variety of ways. The Spanish make them using flour, honey, almonds and several spices. However, in the Latin American countries alfajores are always filled with a generous helping of dulce de leche — prepared by slowly heating sweetened milk that derives its taste and flavor from Maillard reaction, a chemical reaction between amino acids and reducing sugars that gives browned food its taste — which is sandwiched between two round cookies.

Linzer cookies

Similar to a Linzer Torte, these cookies are of Austrian origin and are a holiday favorite in many European countries. The cookie is made of flour, butter, egg yolks, lemon zest, cinnamon, and a variety of nuts. The filling is usually made of redcurrant jam, plum butter, raspberry jam or apricot jam.
